Plain Sponge Cupcakes


This is my recipe that I use on a regular basis to make plain sponge cupcakes.

(Makes 12)

4oz Self Raising Flour
4oz Caster Sugar
4oz Margarine
1tsp Baking Powder
2 Medium Eggs

Heat oven at 170 Degrees Celsius.

Mix together margarine and sugar until light and fluffy.

Add eggs one at a time with a bit of flour with each.

Fold in remaining flour and baking powder.

Line a muffin baking tray with cases.

Distribute mixture evenly between cases.

Bake in the oven for 15mins until well risen and slightly golden.
